You may ask why I have chosen this low carb broccoli and cheese soup. Well, do I need to emphasize the benefits of broccoli? In case you didn’t know, broccoli contains vitamins A, B1, B6 and E, fiber, phosphorus, magnesium, potassium, protein, zinc, omega-3 fatty acids, niacin, and iron. Remember to choose the broccoli that meets these criteria:
- The broccoli is bright green (a slight yellowish hue is okay)
- The broccoli stalks are firm
- Cut out the woody stems, or they’d ruin the dish
- Make sure the florets are not yellow. The yellow color means that the broccoli no longer has the desirable texture
- Look out if the florets are tightly clustered. Tight florets imply fresh broccoli

- White Onion – ⅛ cup
- Finely Minced Garlic – ½ tsp
- Chicken Broth – 2 cups
- Chopped Broccoli – 1 cup
- Cream Cheese – 1 tbsp
- Whipping Cream (Heavy) – ¼ cup
- Shredded Cheddar Cheese – 1 cup
- Cooked Bacon – 2 slices
- Salt and Pepper
- Xanthan Gum – ½ tsp (Optional)

- Preparation: 10 minutes
- Cooking: 20 minutes
- Total: 30 minutes
b. Direction
Follow this direction to make your keto broccoli and cheese soup:
- Take the minced garlic and white onion in a large pot and saute them with butter. Use medium heat for sauteing. Wait till the onions get soft and translucent
- Put the broth and the broccoli in the same pot. Cook the broccoli till it gets tender. It will take 10-15 minutes. Now you can add salt, pepper or your desired seasoning to the mixture
- Take the cream cheese in a small bowl and heat it in a microwave for not more than 30 seconds. It will become soft and stirrable
- Stir the heavy cream and cream cheese to turn them into a soup. Now, boil the mixture
- Take the mixture off the heat and add the cheddar cheese quickly
- If you want your soup to be thick as in the restaurants, add the xanthan gum. You can avoid this step if you like your soup natural
- Serve the soup hot. You can add the bacon slices on the side
c. Tips
- If you don’t want the cheese to form lumps, buy pre-shredded cheese from the store. Add the cheese slowly. Don’t use too much heat or it would clump
- If you’re using a homemade cheese, make sure you coat it with arrowroot powder. If you don’t, the cheese will clump

2. Recipe 2

For this low carb broccoli cheese soup recipe, you’ll need these ingredients:
- Butter – 1 tbsp
- Chopped Yellow Onion – 2 oz.
- Crushed Garlic – 1 clove
- White Wine Vinegar – ½ tbsp
- Cream Cheese – 2 oz.
- Heavy Cream – 1 cup
- Chicken Bone Broth (low-salt) – 1 ½ cups
- Whole Grain Mustard – 1 tsp
- Worcestershire Sauce – ½ tsp
- Red Pepper Flakes
- Broccoli Florets – ½ lb.
- Shredded Cheddar Cheese – 3 oz.
- Sea Salt – ¾ tsp
- Black Pepper
Required time:
- Preparation: 10 minutes
- Cooking: 20 minutes
- Total: 30 minutes
b. Direction
- Put a large pot over medium heat. After heating for a minute, put the butter on the pot and when it starts to melt, stir the mixture
- When the butter stops making any foam, put the onions over it
- Stir the onions in a frequent motion until the pieces start to show a brown tone on their edges
- Put the garlic in the mix. Now, cook for exactly one minute
- Put the vinegar and lower the heat to a simmering temperature. If there are brown bits at the pot’s bottom, scrape them up
- The vinegar has to evaporate completely. So, keep the simmering temperature until it does
- Add the cream cheese and half of the heavy whipping cream to the mix
- Wait for the cream cheese to melt and then, add the rest of the heavy cream. Also, stir in the whole grain mustard, the Worcestershire sauce, and the red pepper flakes
- Now, add the chicken broth. Take down the temperature to a simmer
- Add the broccoli. Maintain the simmer. Occasionally stir the mix until the broccoli is tender. This will require 10-12 minutes
- For turning the mixture into a soup, you can use an immersion blender in the pot or you can take the mixture in batches and put them inside a blender
- After you’re done making the soup, add the shredded cheese, salt, and pepper. You can adjust your seasoning according to your preference
